Not difficult at all. In those days I bought six 2114's and soldered them piggyback on existing ones, except for the enable pins (or chipselect, I forget). Connect the enable pins two by two to the RAM1, RAM2 and RAM3 of the memory multiplexer. It is possible to get that to work on a real VIC if you add your 3K expansion internally to the VIC on the other side of the VIC/6502 barrier but it is VERY complicated.
Now, when I slide the 16K expander in the expansion port, I get 19.5 K free.
The only thing to do after power up is: POKE648,4:POKE642,6:SYS64824 and there you have 22.5 K free, with screen memory at $0400 and BASIC start at $0600.
