Those two, R7 and R32, are trimmer resistors and control video signal amplitude and biasing of the emitter follower in the video amplifier.
The trimmer capacitor C35 is reponsible for fine tuning of the master oscillator clock. Unless it's so much off, that the colour carrier frequency isn't anymore recognised by the TV set or monitor (and you'd get a grey picture), you were well advised to leave it alone.
